Plat Du Jour: Artichoke Risotto

Arborio rice cooked with white white, parmesan cheese, frozen peas, fresh red pepper, and sauteed marinated artichokes and accompanied by tomatoes from the 5 Points Community Farm Market. The tomatoes, to be honest, might have been the star of the meal. Not much can best an in season tomato.

  1. It was very good and very fresh. What Tristan didn’t mention though is that we both would leave out the artichokes next time or use very fresh ones. The canned ones the recipe called for just didn’t complement the overall flavor and texture very well. It was like the creators made a good dish and then asked “what unpopular(ish) veggie could we add to make this stand out?” We could just be crazy though.
